Curry Leaves / Curry Veppilai Powder / Podi

                    The recipe of  Curry Veppilai Powder was requested by a friend and hence this post. This powder is very nutritious as we all know about the medicinal value of Curry Veppilai.
                               
Curry Veppilai Podi


Ingredients :

Cleaned and dried Curry leaves     2 cups
Urad Dhal    1/2  cup
Red Chillies      8 to 10
Salt, Hing, Oil
Pepper ( optional )    1 tbsp

Method :

1. Heat 1 tsp.of oil in a Kadai and roast the Urad Dhal till they turn brown, giving an
    aroma.Add Hing in the end.  Transfer them to a plate

2. Heat the same Kadai and roast the Pepper till they crack.Let them cool.

3. Heat 1 tsp. of oil and roast the red chillies well.Cool.

4. Finally heat 2 tsp. of oil and roast the Curry Leaves till the moisture is absorbed.They
    may not be crisp initially. Switch off and let them cool in the Kadai. Stir in between.
    They become crisp as they cool.

5. In a dry mixer jar, powder the dhal and the Pepper.Then add the roasted Curry leaves
    and salt. Grind till the powder becomes fine but not very fine. This texture can be
   done according to our choice.The healthy curry Veppilai Podi is ready.

Note :

2 tbsp. of Channa Dhal can be roasted and added with the Urad Dhal.

4 or 5 pods of Garlic can be added.

Whole Urad Dhal or Split Urad Dhal, whatever is available at home can be used.
